Chuck Roast Tacos
I bet you've never used a chuck roast for an easy taco! We hadn't either! This recipe is so nice to have going during those busy, busy days for a hot and ready dinner.
1 white onion, diced
3 lb Zion's Farm beef chuck roast
1 cup beef broth (check out our inexpensive bones to make your own broth!)
4 oz tomato paste
1 tsp ground cumin
1 Tbsp ground chili powder
1 Tbsp pepper
1 tsp salt
3 Tbsp brown sugar
1/4 cup white vinegar
1 Tbsp worcestershire sauce
2 tsp lemon juice
2 tsp yellow mustard
In the bottom of a crock pot, put in the diced onions. Place the chuck roast on top of the onions.
Mix together the tomato paste, cumin, chili powder, pepper and salt. Pour mixture on top of the church roast.
Cook chuck roast on high for 4 hours, or low for about 8 hours.
When it's finished cooking, open up your crock pot and pull apart the chuck roast meat with two forks.
Stir the sugar, vinegar, Worcestershire sauce, lemon juice, and yellow mustard into the broth, and mix the pulled beef thoroughly into the broth.
Serve on tortillas, with taco toppings of your choice!
