2 cups shredded zucchini
1 cup sugar
1/2 cup oil
2 cups flour
1/2 cup cocoa powder
1 1/2 tsp baking soda
1 tsp salt
1/2 cup heavy whipping cream
1 cup semisweet chocolate chips
Preheat the oven to 350F and grease a 9x13 baking dish.
In a large bowl, mix together zucchini, sugar and oil. Once thoroughly mixed, add the rest of the ingredients into the bowl. Mixed well.
Spread evenly in your prepared 9x13 dish and bake for 30 mins. Let cool.
In a small saucepan, heat your heavy whipping cream together with your chocolate chips until smooth. Refrigerate until cooled, but not stiff.
Take out of the refrigerate and beat until the ganache forms peaks. Spread on cooled bars. Store in the refrigerator.
